Chicken Cabbage Sauce Recipe

Ingredients:

  • 1 pound chicken breast or thighs, cut into bite-sized pieces
  • 1 medium cabbage, thinly sliced
  • 2 tablespoons vegetable oil
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 2 tomatoes, chopped
  • 1 bell pepper, sliced
  • 1-2 carrots, julienned
  • 1 cup chicken broth or water
  • 1 tablespoon soy sauce (optional)
  • 1 teaspoon thyme
  • 1 teaspoon curry powder
  • Salt and pepper to taste
  • 1 bouillon cube (optional)
  • Fresh parsley or green onions, chopped for garnish

Instructions:

  1. Prepare the Ingredients:
  • Chop the chicken into bite-sized pieces.
  • Thinly slice the cabbage, chop the onion, mince the garlic, and chop the tomatoes. Slice the bell pepper and julienne the carrots.
  1. Cook the Chicken:
  • In a large pan or wok, heat 1 tablespoon of vegetable oil over medium-high heat.
  • Add the chicken pieces and season with salt and pepper. Cook until the chicken is browned and cooked through. Remove the chicken from the pan and set aside.
  1. Sauté the Aromatics:
  • In the same pan, add the remaining tablespoon of vegetable oil.
  • Add the chopped onion and garlic, and sauté until the onion becomes translucent and the garlic is fragrant.
  1. Cook the Vegetables:
  • Add the chopped tomatoes to the pan and cook until they start to break down and release their juices.
  • Add the sliced bell pepper and julienned carrots. Stir and cook for a few minutes until they begin to soften.
  1. Add the Cabbage:
  • Add the sliced cabbage to the pan. Pour in the chicken broth or water and stir to combine.
  • Cover the pan and let the cabbage cook for about 5-7 minutes until it starts to soften.
  1. Season the Sauce:
  • Add the soy sauce (if using), thyme, curry powder, and bouillon cube (if using) to the pan. Stir well to combine.
  • Season with additional salt and pepper to taste.
  1. Combine Chicken and Vegetables:
  • Return the cooked chicken to the pan and stir to combine with the vegetables.
  • Let the mixture simmer for another 5-7 minutes to allow the flavors to meld together.
  1. Garnish and Serve:
  • Once the chicken and vegetables are fully cooked and the sauce has thickened slightly, remove from heat.
  • Garnish with chopped fresh parsley or green onions.
  1. Serve:
  • Serve the chicken cabbage sauce hot, over rice, noodles, or your preferred side dish.
