Chicken Cabbage Sauce Recipe
Ingredients:
- 1 pound chicken breast or thighs, cut into bite-sized pieces
- 1 medium cabbage, thinly sliced
- 2 tablespoons vegetable oil
- 1 large onion, chopped
- 2 cloves garlic, minced
- 2 tomatoes, chopped
- 1 bell pepper, sliced
- 1-2 carrots, julienned
- 1 cup chicken broth or water
- 1 tablespoon soy sauce (optional)
- 1 teaspoon thyme
- 1 teaspoon curry powder
- Salt and pepper to taste
- 1 bouillon cube (optional)
- Fresh parsley or green onions, chopped for garnish
Instructions:
- Prepare the Ingredients:
- Chop the chicken into bite-sized pieces.
- Thinly slice the cabbage, chop the onion, mince the garlic, and chop the tomatoes. Slice the bell pepper and julienne the carrots.
- Cook the Chicken:
- In a large pan or wok, heat 1 tablespoon of vegetable oil over medium-high heat.
- Add the chicken pieces and season with salt and pepper. Cook until the chicken is browned and cooked through. Remove the chicken from the pan and set aside.
- Sauté the Aromatics:
- In the same pan, add the remaining tablespoon of vegetable oil.
- Add the chopped onion and garlic, and sauté until the onion becomes translucent and the garlic is fragrant.
- Cook the Vegetables:
- Add the chopped tomatoes to the pan and cook until they start to break down and release their juices.
- Add the sliced bell pepper and julienned carrots. Stir and cook for a few minutes until they begin to soften.
- Add the Cabbage:
- Add the sliced cabbage to the pan. Pour in the chicken broth or water and stir to combine.
- Cover the pan and let the cabbage cook for about 5-7 minutes until it starts to soften.
- Season the Sauce:
- Add the soy sauce (if using), thyme, curry powder, and bouillon cube (if using) to the pan. Stir well to combine.
- Season with additional salt and pepper to taste.
- Combine Chicken and Vegetables:
- Return the cooked chicken to the pan and stir to combine with the vegetables.
- Let the mixture simmer for another 5-7 minutes to allow the flavors to meld together.
- Garnish and Serve:
- Once the chicken and vegetables are fully cooked and the sauce has thickened slightly, remove from heat.
- Garnish with chopped fresh parsley or green onions.
- Serve:
- Serve the chicken cabbage sauce hot, over rice, noodles, or your preferred side dish.
