Vegetable Egg Sauce Recipe
Ingredients:
- 4 large eggs
- 2 tablespoons vegetable oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 tomatoes, chopped
- 1 bell pepper, chopped
- 1 carrot, diced
- 1 cup spinach, chopped
- 1 teaspoon curry powder
- 1 teaspoon thyme
- Salt and pepper to taste
- Optional: 1 hot pepper, chopped (for a spicy kick)
Instructions:
- Prepare the Ingredients:
- Chop the onion, garlic, tomatoes, bell pepper, carrot, and spinach. If using a hot pepper, chop it finely.
- Beat the eggs in a bowl and set aside.
- Heat the Oil:
- In a large pan, heat the vegetable oil over medium heat.
- Cook the Vegetables:
- Add the chopped onions to the pan and sauté until they become translucent.
- Add the minced garlic and cook for another minute until fragrant.
- Add Tomatoes and Peppers:

- Reduce the heat to low. Pour the beaten eggs over the vegetable mixture. Let it sit for a few seconds to begin setting, then gently stir to scramble and combine the eggs with the vegetables.
- Season:
- Season with salt and pepper to taste. Continue to cook until the eggs are fully set but still moist.
- Serve:
- Remove from heat and serve the vegetable egg sauce hot. It pairs well with rice, bread, yam, or plantains.
