Vegetable Egg Sauce Recipe

Ingredients:

  • 4 large eggs
  • 2 tablespoons vegetable oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 tomatoes, chopped
  • 1 bell pepper, chopped
  • 1 carrot, diced
  • 1 cup spinach, chopped
  • 1 teaspoon curry powder
  • 1 teaspoon thyme
  • Salt and pepper to taste
  • Optional: 1 hot pepper, chopped (for a spicy kick)

Instructions:

  1. Prepare the Ingredients:
  • Chop the onion, garlic, tomatoes, bell pepper, carrot, and spinach. If using a hot pepper, chop it finely.
  • Beat the eggs in a bowl and set aside.
  1. Heat the Oil:
  • In a large pan, heat the vegetable oil over medium heat.
  1. Cook the Vegetables:
  • Add the chopped onions to the pan and sauté until they become translucent.
  • Add the minced garlic and cook for another minute until fragrant.
  1. Add Tomatoes and Peppers:
  • Stir in the chopped tomatoes, bell pepper, and optional hot pepper. Cook until the tomatoes soften and release their juices.
  1. Add Carrots and Spices:
  • Add the diced carrot to the pan. Sprinkle in the curry powder and thyme. Stir well to combine and cook for another 2-3 minutes.
  1. Add Spinach:
  • Stir in the chopped spinach and cook until wilted, about 1-2 minutes.
  1. Add Eggs:
  • Reduce the heat to low. Pour the beaten eggs over the vegetable mixture. Let it sit for a few seconds to begin setting, then gently stir to scramble and combine the eggs with the vegetables.
  1. Season:
  • Season with salt and pepper to taste. Continue to cook until the eggs are fully set but still moist.
  1. Serve:
  • Remove from heat and serve the vegetable egg sauce hot. It pairs well with rice, bread, yam, or plantains.
